Chicken Hoisin Skewers with Noodle Salad
Hoisin, a Chinese style barbecue sauce, is one of my favorite sauces to use as a dip or marinade and is especially delicious on spare ribs! There are many recipes out there that incorporate hoisin sauce so don’t be afraid to try a few! The noodle salad that accompanies this dish is fresh and light.

12 skewers
2 (500g) chicken breast fillets, trimmed
1/3 cup Hoisin sauce
2 tablespoons salt reduced soy sauce
2 tablespoons Chinese rice wine
2 garlic cloves, finely chopped
250g packet rice vermicelli noodles
1 cup fresh coriander leaves, finely chopped
1 small red chili, deseeded and finely chopped
1 medium red bell pepper, thinly sliced
1 Lebanese cucumber, halved, deseeded and thinly sliced
3 green onions, thinly sliced
1/3 cup dry roasted cashews
2 tablespoons sweet chili sauce
Cut each chicken breast lengthways into 6 strips. Combine chicken, hoisin sauce, soy sauce, rice wine and garlic in a bowl. Cover and refrigerate for 30 minutes. Thread chicken onto 12 skewers. Spray barbecue plate or chargrill with oil. Cook skewers over medium high heat for 5-6 minutes each side or until browned and cooked through.
Meanwhile, place noodles in a large bowl and cover with boiling water. Stand for 5 minutes or until soft. Drain and rinse under cold water. Drain. Combine coriander and chili in a bowl and add noodles, red bell pepper, cucumber, onion, cashews and sweet chili sauce. Toss to combine. Serve noodle salad with the chicken.
The Culinary Chase’s Note: You might need to add more chili sauce to the noodles. This is an easy meal to make without having to spend a lot of time in the kitchen.

I love hoisin, and these are just the kind of chicken skewers I could eat like candy. Recently I’ve been able to buy it in squeeze bottles, which is incredibly convenient.
